Peanut Butter Chocolate Dates

Mmmmm... I am addicted to these. Being healthy can still be a lot of fun! I know there is some controversy over peanut butter (it may contain mould as peanuts are groundnuts) but these are worth it to me as most peanut butter is tested and regulated. You can of course use almond butter if you prefer. I am going to experiment with adding raspberries and plant-based ice-cream too!
Recipe
9-10 dates
100g raw chocolate (I will post a simple recipe separately soon, but you can also use a bar of chocolate that you like and melt it in a bain-marie. I suggest using 90-100% dark so that you avoid as much sugar as possible, the dates are sweet enough!)
Approximately 9 teaspoons of peanut butter (I use pure peanut butter with no sugar or other additives)

Instructions
Pit the dates and fill with peanut butter, about a level teaspoon each depending on your preference and the size of the date.
Make the raw chocolate (or melt the bar*) and coat each date in the chocolate. Place them on baking paper on something solid like a chopping board that makes them easy to transfer to the fridge.
*use a bain-marie - container of hot water that surrounds another dish to melt ingredients slowly and evenly, without direct heat. I use a glass bowl in a saucepan of hot water.
