Energy Balls

I love these, they are so easy to make and you can experiment and throw in anything you fancy! They are packed full of nutrients and fill you up, providing you wtih lots of energy. What's not to like!
Ingredients
1 cup (175g) Medjool dates, pitted
½ cup (75g) almonds
¼ Cup (30g) cacao powder
2 tablespoons nut butter (such as almond or peanut butter)
2 tablespoons maple syrup
1 teaspoon vanilla extract or the inside of a vanilla pod
Pinch of sea salt
Shredded coconut or cacao powder for coating (optional)
Method
In a food processor, blend dates and almonds until finely chopped.
Add cacao powder, nut butter, maple syrup, vanilla extract and salt. Pulse until the mixture forms a sticky dough.
Scoop out tablespoon-sized portions and roll them into balls.
If desired, roll the energy balls in shredded coconut or cacao powder to coat.
Place the energy balls in the fridge for about 30 minutes to set.
